What else could make a sunday be even better?!
Pancakes are one of those things we all do and they always end up good. You can have them more complex or simple, tastier or “normal”, but they never fail us!
Well, at least to most people. Every time I tried to make them, don’t ask me why, they always came up salty. And no, I didn’t mistake salt with sugar!
I had given up until I saw these and decided to give it another try. I made some changes, so they will be simpler to make, but they still ended up so tasty and fluffy I had to share with you! Also, they are healthier than most, since they don’t have any sugar added and are gluten and dairy free!
So, here are the ingredients:
- 3 eggs
- 125ml of almond milk
- 100g of flour (I use a gluten free one, but you can use anyone, even coconut flour or the one you like the most)
- 1 or 2 of almond butter (I usually use 2)
- 1 tea spoon of apple cider vinegar
Some of these quantities I change a bit, until the texture is the way I like it.
The preparation itself is also really simple:
Whisk the eggs and milk until they mix well. Then add the butter and the vinegar and mixed them until it’s all smooth. Finally, the flour and yes, yoi guessed it… Whisk together until it’s all well mixed.
While you do that, start to heat a pan (I use coconut oil so the pancaked won’t stick) and when it’s warm, let the magic begin!
